As part of our “What the Doctor Ordered” series, we asked some of our favorite local restaurants to create heart-healthy meals with five cardiologist-approved ingredients.
White Plains Hospital Physician Associates cardiologist Dr. Gabriela Grasa challenged Anthony Goncalves, Executive Chef at The Restaurant at Kanopi, to create a dish using chicken, tomatillos, black beans, romaine lettuce, and garlic.
Chef Anthony created a Family Meal dish: Pulled chicken with black beans, tomatillo sauce and baby romaine lettuce.

- Skinless chicken is low in fat and a great source of protein.
- Black beans are high in protein -- and are also naturally gluten-free!
- Romaine lettuce is rich in potassium, which helps regulate blood pressure.
- Tomatillos are also high in potassium, as well as in fiber, which helps you feel fuller longer.

Chef Anthony Goncalves
Pulled Chicken
Ingredients:
4 Skinless chicken breasts, wing bone in
4 bay leaves
1 onion, halved
6 cloves of garlic, smashed
Pinch of salt
2 sprigs of thyme
4 quarts of water
Procedure:
Boil all together over medium heat for 50 minutes, stirring occasionally. Remove chicken breasts and pull apart.
Black Beans
Ingredients:
2 lbs. dried black beans
1 whole head of garlic, sliced in half
1 onion, quartered
Pinch of Salt
Water to cover beans
Procedure:
Simmer all in water for 2 hours, add more water to cover beans as needed.
Tomatillo sauce
Ingredients:
2 lbs. of tomatillos
6 cloves of garlic
1 Onion, chopped
1 bunch of cilantro
Pinch of salt
Procedure:
Boil all until tomatillos change color from bright green to brown. Then pull the tomatillos from the liquid and blend until fine.
Grilled Baby Romaine
Ingredients:
1 whole head of baby romaine lettuce, quartered
Salt & pepper to taste
Olive oil
Procedure:
Quarter lettuce, add salt & pepper and grill to get char marks on two sides. Finish with olive oil.
